ATS 34 is a chrome molybdenum alloy with excellent edge retention. It is also abrasion and corrosion-resistant. ATS-34 provides better edge retention than standard stainless steel, making it a good choice for blades that require heavier cutting applications.
Oil Quenched
ATS 34 Japanese Steel made by Hitachi—An ingot alloy, ATS-34 targets the middle to higher-end knife segment. With 14% chromium, it is quite corrosion-resistant. The steel can be treated to a hardness of 60-61, offering adequate edge retention, but the alloys show more toughness properties and are, therefore, better suited for heavier-duty kitchen work.
