The Chef’s Knives are multi-purpose kitchen knives, typically 8 inches long, constructed of stainless steel and carbon steel. AUS-10 has an excellent resistance to rusting. The elements that makeup AUS-10 help the steel reach a high level of hardness, wear, corrosion resistance, toughness, and superior edge retention. The hardness of AUS-10 steel is mainly caused by the incredibly high carbon content of approximately 1.05. As a result, the knives can easily be sharpened, leaving you with a razor-sharp edge.
